The taco, a mexican
prehispanic food
Made with tortillas, filled with a
variety of food and seasoned with sauce, mayonnaise or sour cream, the mexican tacos are characterized by
its quick preparation and easy adquisition, due to its low prices.
It seems that the taco took its name out of the
way in which the spaniards called the snacks that they ate between meals.
The taco had its origins in the field, when the peasants' wifes were looking for a
way in which their husbands could take their lunches with them to the farmlands.
With the cities growth, the peasants took with them
their habits to the cities, making popular this kind of fast food, that very soon was one
of the preferred meals of the mexicans.
The main ingredient of the taco is the tortilla, it is filled with diferent stews, and
seasoning with tomato and chili sauces, vegetables and some other ingredients.
By the variety in its content, the tacos can be of
"carnitas" (pork meat), this come from Michoacán and Jalisco, the tacos of head
beef are from the Bajío, the Barbacoa tacos are from the
center of the country (México city, tlaxcala and Hidalgo), they are made with lamb meat
that is cooked in maguey pencas.
The tacos of canasta (basket) or sudados are from México
city, they are sold in baskets, and they are made with small tortillas that are not rolled
but bent, they are elaborated with green mole, pork meat in pipian, grinded meat, potatoes
with smoked pork sausage.
The tacos "al pastor" come from Greece and Turkey, where
are made with wheat-flour tortilla. they are elaborated with marinated pork meat that is
roasted, they are seasoned with chopped pineapple, onion and cilantro.
The indigenous tacos are of Charales, maguey worms,
sweet water shrimps, ant spawn or escamoles, and even chapulines (a kind of crickets).
T he most famous yucatecan tacos are of cochinita pibil, black relleno
or "But" and escabeche oriental. But it is also famous the papadzul, an egg taco
with pepita and tomato sauce, and the codzitos, fried rolled tortilla with red sauce and
cheese.
The sea food tacos are filled with
breaded shrimp, jaiba with mayonnaise, fried fish and some kind of shellfish.
The taco is the most democratic of all
the mexican food, because it is light, fast to prepare and suitable in informal meetings
with friends and parties, you should try them in any of its varieties!.
